Recipe banana bread turban
50 g self-raising flour
100 g whole wheat flour
1 tsp ground cardamom
200 g almond flour
50 g grated coconut
3 tbsp peanut oil
180 g of liquid honey
½ tsp salt
100 g raw unsalted nut mix
150 g dried fruit, cut into pieces (apricots, plums, figs and / or dates)
- Preheat the oven to 175 ° C. Spray the turban tin with the baking spray.
- Peel and mash the ripe bananas. Sift the self-raising flour, wheat flour and cardamom over a large bowl. Mix in the banana, almond flour, grated coconut, oil, honey and salt. Chop the nuts roughly and toss with the dried fruit into the batter.
- Divide the batter over the turban tin and bake it in the middle of the oven for about 50 minutes until golden brown and done. After 45 minutes, check by sticking the skewer in it. If it comes out clean, the turban is done. Let the turban cool down for 45 minutes in the tin and then take it out. Let it cool down further. In total this takes about 1 hour.
Idea: also delicious with fresh fruit such as raspberries in the summer.
