On request of our Auvergne Road Cycling Round Trip guests who did dine with us last night herewith the recipe of the strawberry-orange–tiramisu. The recipe is for 8 to 10 persons.
Ingredients:
3 oranges
20 ladyfingers
500 gram strawberries
4 eggs
6 tablespoons caster sugar
250 ml cream
250 gram mascarpone
1 lemon
Optionally 50 grams of dark chocolate
Scrub the oranges, grate the orange zest and squeeze the oranges. Divide the sponge fingers on the bottom of a dish. Pour half of the fresh orange juice over it. Save the other half of the juice.
Cut the strawberries in slices and put them with 2 tablespoons sugar in a bowl. Leave for 5 minutes.
Meanwhile beat the egg yolks of 4 the eggs with 2 tablespoons sugar until stiff. The egg white is not used.
In another bowl whisk the cream with the rest of the sugar stiff. Stir the mascarpone with a fork and mix with the cream and add the egg yolk mixture.
Spread half of the strawberries over the sponge fingers.
Grate the lemon and squeeze it.
Spoon also the orange and lemon grate in to the cream mixture. Stir in the rest of the orange juice and a splash of lemon juice but make sure the mixture is not too runny.
Spoon the cream mixture over the ladyfingers. Divide the remaining strawberries and optionally grate some dark chocolate over it.
Cover the dish and put in a fridge for 2 hours.
